Machboos Calories: Why Sources Say 372 or 1,104 kcal (and How to Log It)

Why published machboos calorie counts run from 372 to 1,104 kcal per serving, a USDA component model for home, restaurant, platter and lamb plates, kabsa and mandi compared, and how to log a shared platter.

Key takeaways

  • Published machboos servings run from 372 to 1,104 kcal. The two extremes, both on one app's crowd-sourced pages, work out at the same 143 kcal per 100 g. One serving weighed 260 g and the other 770 g.
  • Recipe sites with full nutrition land between 573 and 854 kcal per serving (Foreign Fork, Daring Gourmet, Spinneys, Cooking Gorgeous). Their fat ranges from 23 to 35.6 g per serving.
  • In our USDA-based calculation, a home plate of 1 cup rice, 120 g chicken breast and a teaspoon of ghee is about 464 kcal. A restaurant plate with skin-on thigh, a tablespoon of ghee and a nut topping is about 1,030.
  • Three levers explain most of the gap: each extra cup of cooked rice adds about 205 kcal, skin-on thigh instead of breast adds about 100 kcal per 150 g, and each tablespoon of ghee adds about 112.
  • Kabsa and mandi sit in the same band. A 2025 Saudi analysis put chicken kabsa at 108 kcal, meat kabsa at 137 and mandi at 104 kcal per 100 g, before cooking losses.
  • To log a shared platter, log rice, meat pieces and ghee as three separate items. A photo alone can't see how much fat is in the rice.

Callie is our app. It comes up in one section near the end. Every figure links to its source, listed at the bottom. Where we calculated a number ourselves, the table or sentence says so.

The 30-second answer

A plate of chicken machboos is about 450 to 1,050 kcal, and the portion and the fat decide where you land. The widest published pair we found is 372 and 1,104 kcal per serving. Both come from crowd-sourced pages on the Arise app, and both work out at 143 kcal per 100 g: one serving weighed 260 g, the other 770 g. Same density, three times the food.

Recipe sites that publish full nutrition fall in between, at 573 to 854 kcal per serving. Our own calculation from USDA values puts a light home plate (1 cup rice, chicken breast, a teaspoon of ghee) at about 464 kcal and a restaurant plate at about 1,030. If you log one thing carefully, make it the rice. If you log two, add the ghee.

Published machboos calories, side by side

Published servings of machboos and kabsa range from 372 to 1,104 kcal. The table lists each source with its date and portion, so you can see what each number actually measures.

The Arise pages say their data is "based on real meals tracked by Arise app users". We use them only to show the spread, not as reference values. Spinneys adds its own caveat: "Given the cook-at-home nature of Spinneys and natural variations in ingredients, nutritional information is approximated."

One panel doesn't add up. Maggi Arabia lists 18.89 g of carbohydrate per serving, but 2 cups of raw rice split six ways is about 62 g of raw rice each, which carries about 49 g of carbohydrate by USDA values (our calculation). Treat that 401 kcal as low.

Why 372 and 1,104 are the same dish

The two Arise entries differ by a factor of three because one plate weighs three times as much. Per 100 g they are identical.

The 372 kcal plate holds 150 g of basmati rice, 80 g of roasted chicken breast and 30 ml of daqqus (tomato sauce). The 1,104 kcal plate holds 250 g of rice, 220 g of chicken leg and thigh, 100 ml of daqqus and 200 ml of laban. Take out the laban, which the page lists at 120 kcal, and the machboos part is 984 kcal.

Per 100 g, Gulf rice dishes cluster far closer than per-serving numbers suggest. A 2025 Saudi analysis put chicken kabsa at 108.43 kcal per 100 g, and our home plate below comes to 125. What changes is mostly the grams on the plate, then the ghee in the pot. So when a database gives one "serving" figure, ask what it weighed. Most don't say.

Fat: the second lever

After portion size, the cooking fat explains most of the remaining gap. On the same six-way split, Foreign Fork lists 23 g of fat at 573 kcal and Daring Gourmet 35 g at 675 kcal.

Each tablespoon of ghee is 12.8 g and about 112 kcal, using USDA's butter oil entry (876 kcal per 100 g). A tablespoon of sunflower oil is 13.6 g and about 120 kcal. The recipes use very different amounts:

  • Maggi Arabia: 1 tbsp sunflower oil for six servings
  • Cooking Gorgeous: 1 tbsp olive oil plus 1 tbsp ghee for four
  • Foreign Fork: 4 tbsp ghee or olive oil for six
  • Daring Gourmet: 3 tbsp ghee plus 2 tbsp oil for six
  • Spinneys: 3.5 tbsp oil for four, plus 100 g of toasted cashews

The toppings matter too. Spinneys' 100 g of cashews adds about 574 kcal to the pot by USDA values, about 144 kcal per serving (our calculation). The myfood24 Arabic food database mapped its lamb kabsa recipe at 8% sunflower oil by weight. At 8 g of oil per 100 g, that's about 71 kcal per 100 g from oil alone. More on this in hidden calories in oil, butter and sauces.

The building blocks, from USDA

A machboos plate is mostly three ingredients: rice, meat and fat. Everything else in the pot adds very little. These are the USDA FoodData Central values we used.

ComponentUSDA FDC IDkcal per 100 gCommon portion
White long-grain rice, cooked1688781301 cup (158 g) = 205 kcal

Onion, raw1700004030 g = 12 kcal
Tomato, raw1704571860 g = 11 kcal

Loomi (dried lime) has no USDA entry. A whole fresh lime is 67 g and about 20 kcal (FDC 168155), and loomi is usually lifted out before serving, so we count it as zero, along with the spices. The portion column is our arithmetic. Rice absorbs the cooking fat, which is why we add ghee as its own line.

Four plates of machboos, calculated

Our calculation puts four common plates between about 464 and 1,330 kcal. All weights are cooked, edible portions with bones removed.

Plate (our calculation)What's on itkcalkcal per 100 g
Home plate1 cup rice (158 g), 120 g chicken breast, 1 tsp ghee, onion and tomatoabout 464about 125
Restaurant plate250 g rice, 2 skin-on thigh pieces (200 g), 1 tbsp ghee, 10 g almonds, 15 g raisins, onion and tomatoabout 1,030about 178

The home plate lands near the Saudi kabsa values and the 372 kcal Arise entry; the restaurant plate near the 984 kcal machboos part of the 1,104 kcal entry. Three levers separate them: about 205 kcal per extra cup of rice, about 100 kcal for 150 g of skin-on thigh instead of breast, and about 112 kcal per tablespoon of ghee.

Machboos vs kabsa vs mandi

Kabsa and mandi land in the same calorie band as machboos, and the published differences between them are smaller than the differences within each dish. Machboos is the name used in the UAE, Kuwait, Bahrain and Qatar, usually with loomi. Kabsa is the Saudi name. Mandi is traditionally cooked in a pit or sealed oven, often with lamb.

The Saudi values come from recipe software, and the authors say so plainly: "ESHA does not account for nutrient changes due to cooking time, processing losses, or anti-nutritional factors." The myfood24 recipe lists 63% boiled basmati rice, 5% boiled chickpeas, 3% raisins, 19% grilled lamb chops and 8% sunflower oil by weight. Its oil share is what pushes it to about twice the Saudi figures. Our UAE food calories hub has the wider list of Gulf dishes.

Why AI photo apps struggle with machboos

Photo apps struggle with machboos for three reasons, and none is recognising the dish.

  1. The fat is invisible. Ghee cooked into rice looks the same at one teaspoon as at three tablespoons. That's up to about 300 kcal a photo can't see.
  2. Rice depth is hidden. On a platter, a camera sees the surface, not how deep the rice is. A 2025 American University of Beirut thesis on Lebanese dishes reported "a portion-size MAE of 108.3 g" for its best model on free-living photos. For cooked rice, 108 g is about 140 kcal (our calculation).
  3. Gulf dishes are under-represented. The authors of a 2022 food-recognition paper wrote that "food recognition with respect to Middle Eastern cuisines has remained unexplored." The myfood24 team found that 79% (1,585) of the 2,016 items in their Arabic database were generic UK entries, and they described GCC food composition data as "limited".

More in why AI calorie apps underestimate. The fix is to check the portion yourself before saving.

How to log a shared platter

Log machboos from a platter as three separate items: rice, meat and fat. That turns one big guess into three small ones you can check.

  1. Estimate the rice in cups. Cooked rice is about 205 kcal per 158 g cup. If you eat with your hand or a serving spoon, calibrate once at home: scoop your usual amount into a measuring cup and note how much it holds.
  2. Count the meat pieces. Note the cut and whether you ate the skin. A 150 g piece of skin-on thigh is about 348 kcal, and the same weight of breast meat is about 248.
  3. Add the ghee separately. If the rice is glossy and leaves oil on the plate, add 1 tablespoon (about 112 kcal) as a starting point. That's our rule of thumb, not a measured value.
  4. Add the toppings. Fried nuts and raisins can add 100 kcal or more per plate.
  5. Log your drink and sides. The 1,104 kcal entry included 200 ml of laban at 120 kcal.

If your family makes the same machboos every week, enter the recipe once and re-use it. Our guide on how to track homemade meals and recipes walks through that. For the other Gulf staples, see shawarma calories and karak chai calories.

Estimates, not lab values

Every plate figure here is our calculation from USDA values, and recipe figures are estimates too. If you have a medical condition that depends on exact intake, follow the plan your doctor or clinician gives you.

How Callie fits in

Callie logs machboos by photo, voice or text, and it shows every detected item, portion and calorie value on a review screen before anything is saved.

  • Correct the portion before you confirm. If the photo misses the depth of the rice or the ghee, change the amounts on the review screen.
  • Log in parts by voice or text. "Two cups machboos rice, two chicken thighs with skin, one tablespoon ghee" gives a better number than "machboos".
  • Arabic interface. The app runs in Arabic with a right-to-left layout, alongside English, French, Spanish, German and Japanese. You can type "مچبوس دجاج" or say it.
  • AI coach in any language. Ask in Arabic or English how a Friday platter fits the rest of your week.

Two limits. Callie has no offline mode yet, so at a desert camp with no signal, take the photo and log it later. And it can't know how much ghee your aunt used, so add the fat yourself. Callie is free to download with 3 AI logs to try it, then AED 99.99 a year in the UAE ($34.99 in the US).

When a different approach is the better choice

A calorie app isn't always the best tool here.

  • If you cook it at home every week, a kitchen scale and a saved recipe beat any photo estimate, in Callie or elsewhere.
  • If you eat machboos once a month, logging a sensible plate figure (about 600 to 800 kcal) and moving on is fine.
  • If you need micronutrients such as iron or sodium, Callie doesn't track them. Cronometer is the better pick.
  • If you have a history of disordered eating, skip the numbers at family meals and speak to a clinician.

Frequently asked questions

How many calories are in a plate of chicken machboos?

Roughly 450 to 1,050 kcal, depending on the plate. Our USDA-based calculation puts 1 cup of rice with 120 g of chicken breast and a teaspoon of ghee at about 464 kcal, and a restaurant plate of 250 g rice, two skin-on thigh pieces and a tablespoon of ghee at about 1,030. Recipe sites with full nutrition list 573 to 854 kcal per serving.

Why do machboos calorie counts disagree so much?

Mostly portion size and fat. Two crowd-sourced entries on one app list 372 and 1,104 kcal, yet both work out at 143 kcal per 100 g: the servings weighed 260 g and 770 g. Recipe cards differ mainly in how much ghee or oil they use and how much rice they put in each serving.

Is machboos the same as kabsa?

They are close relatives. Machboos (also written majboos or makbous) is the Emirati, Kuwaiti, Bahraini and Qatari name, and it usually features dried lime (loomi). Kabsa is the Saudi name. A 2025 Saudi software analysis put chicken kabsa at 108.43 kcal and meat kabsa at 137.41 kcal per 100 g, which is within the range we calculate for a light home machboos.

Is lamb machboos higher in calories than chicken?

Usually, yes. USDA lists roasted lamb shoulder with its fat at 276 kcal per 100 g, against 165 for roasted chicken breast. In our calculation, swapping 180 g of fatty lamb shoulder for lean shoulder meat on the same plate drops it from about 1,060 to about 930 kcal.

How do I log machboos from a shared platter?

Log three things. Estimate the rice in cups (about 205 kcal each for plain cooked rice), count the meat pieces and note whether you ate the skin, then add the ghee or oil as its own line. If the rice is glossy and leaves oil on your plate, a tablespoon of ghee (about 112 kcal) is a reasonable starting estimate.

Can an AI photo app count machboos accurately?

It can recognise the dish, but it can't see the fat cooked into the rice or tell how deep the rice is on a shared platter. A 2025 American University of Beirut thesis on Lebanese food reported a portion-size error of 108.3 g in free-living photos. Use an app that lets you check the portion before it saves the entry.
